Otak-Otak

Now this one is AI's favourite..

Ingredients:

500 g mackerel (tenggiri)/ red snapper (merah)/ garoupa (kerapu)

Mixture 1:
1/2 tsp salt
1/2 tsp ikan bilis granules
1/4 tsp pepper

Mixture 2, blend together:
4 fresh red chillies, seeded
3 cm galagale/lengkuas, sliced
2 cm fresh turmeric root/kunyit or 1/2 tsp turmeric powder/sebuk kunyit
5 candlenuts/buah keras
2 stalks lemon grass/serai, sliced
10 shallots
4 cloves garlic

Mixture 3:
1 tsp shrimp paste/belacan powder
1/2 tbsp rice flour
1/2 tbsp cornflour

Seasoning:
1/2 tsp salt
1 1/2 tsp sugar
1/4 tsp pepper

Mixture 4:
3 eggs, lightly beaten
5 kaffir lime leaves/daun limau purut, finely sliced
1/2 cup thick coconut milk (from 1/2 coconut, grated)

2 Daun kunyit, sliced very very fine.
*Daun kadok
*Banana leaves


Fillet the fish and cut into thin slices.
Season fish fillet with mixture 1 for 15 mins.
Mix together mixture 2 & 3 well.
Blend in seasoning & mixture 4.
Then add the fish slices.

(this is where i start deviating from the recipe. instead of packeting the otak-otak mixture using kadok and banana leaves, i choose the easy way out and treat it as you would a quiche so.. )

Take out a suitable pie dish and spread out the otak-otak mixture evenly.
Sprinkle the very finely sliced daun kunyit all over the top.
Bake in oven about 210 c for 30-40 minutes (check often in case hangit lol).
Cut and serve with rice.

Butter Prawns

You need a really hot stove for this. kalau api tak cukup kuat the egg strips wont turn crispy.

Ingredients:

1/2 kg large prawns

Mixture 1:
1 tsp salt
1 tsp sugar (lesser pun takpe)
1/2 tsp pepper
1 tsp sesame oil

Mixture 2:
3 tbsp cornflour
1 tbsp curry powder


Mixture 3:
2 tbsp butter
3 egg yolks
1 tbsp evaporated milk
1/4 tsp salt
1/4 tsp pepper

Mixture 4:
2 tbsp butter
1 tbsp chopped garlic
2 tbsp chopped chilli padi
1 tbsp chopped curry leaves


Seasoning:
1 tbsp oyster sauce
1/2 tsp pepper

Trim off feelers n legs from prawns.
Rinse and let dry.
Marinade prawns with mixture 1 for 20 mins.
Toss marinated prawns in mixture 2.
Deep fry prawns in hot oil till just cooked.
Remove prawns and drain oil.

Heat kuali, add butter and mixture 3. Stir vigorously with chopsticks or long fork to get crispy strips of eggs.
Remove from kuali.

Reheat wok with butter and stir in mixture 4 until fragrant.
Stir in precooked prawns, seasoning and eggs strips.
Stir well and serve immediately.

Choc chip cookies

Makes a whole bunch, enough in fact to share with family, friends & sweethearts ;)

Ingredients:



3 1/2 cups all-purpose flour
1 tbsp baking soda
1/2 tsp salt (lesser better)
1 3/4 bars butter
1 cup brown sugar
1 cup white sugar
1 large egg
1 tbsp water
2 tsp vanilla
1 1/2 cup instant oats/cornflakes
1 cup walnut/almond bits, lightly toasted.
12 oz semi-sweet choc chips (preferably Hersheys)




Preheat oven to 175 c

Mix flour, baking soda n salt in medium bowl.

Melt butter n mix well with sugars, egg, water n vanilla in bigger bowl.

Fold in flour mixture little by little & mix well.

Stir in oats & nuts, mixing well before stirring in the chips last (to prevent chips from melting).

Drop heaped tsp sizes onto ungreased pan.

Bake about 15-20 mins until cookies are slightly brown at edges.

Remove let cool in pan about 2 mins and move to cool completely on racks.

Store.

Cream Puffs



A family favourite. its more suited for sweet filling but in our house we sometimes stuff it with something savoury like chilli tuna. oh and btw, its fast becoming AH's speciality :)

Ingredients:

1 cup water
1/2 cup margarine or butter
1 cup all-purpose flour
4 eggs

Heat oven to 400 f.

Boil margarine/butter and water in saucepan.



Stir in flour and continue stirring vigorously on low heat until mixture forms a ball (bergumpal), about 1 min.



Remove from heat and beat in eggs all at once until smooth (a lil tricky but persevere, it'll come together i promise lol).



Drop dough onto cookie sheet in amount related to size required (we prefer small bite-sizes as compared to the usual beard papa ones) and allow some space for it to swell a lil bit.



Bake until puffed and golden, about 30 mins.



Slit the tops, remove any filaments of soft dough (i usually just leave it in).

Fill puffs with desired filling.


Sweet Cream Filling.

2/3 - 1 cup sugar (depending on the intensity of your sweet tooth)
4 tbsp cornflour
1/4 tsp salt
4 cups milk
3 egg yolks (large), slightly beaten
4 tbsp margarine/butter, softened
4 tsp vanilla

Mix sugar, salt and cornflour in saucepan.

Stir in milk gradually over medium heat (use a whisk, its easier), stirring constantly until mixture thickens and boils.

Boil and stir for 1 min.

Stir at least half of hot mixture gradually into egg yolk (you want the egg to thicken not cook into tiny bits) then blend into rest of mixture in saucepan.

Boil and stir another 1 min.

Remove from heat and stir in margarine/butter and vanilla.

Cool and use as required.


Savoury Tuna Filling.

2 small cans chilli tuna (e.g. ayam brand)
3 tbsp mayo
1 tbsp tartar sauce
a dash of pepper
diced onions

Mix well together and fill puffs as required.

I love to eat therefore i love to cook :)

Ooh nothing special, just simple stuff that my family seems to like but they're a bunch of ever hungry people so its not that hard to please them haha.

I just thought i'd put together some of their favourite recipes here so that golfman and the boys (who are now scattered all over god's earth) or even AH, can have easy access whenever the need arise... mana la tau kot nak masak2 la pulak kan?!!
